Macabeu Blanc 2023

Vineyards
Macabeo plots planted on our Turó del Castell, Aubellons and Quintana del Castell estates, located at an altitude of 300 metres on soils poor in sand and river-formed pebbles in the upper Conca del Gaià.
Harvest - grape harvest
The harvest was dry and warm, with high temperatures throughout the year and extremely low rainfall during spring and early summer, which allowed for a low-yield but high-quality vegetative cycle for the vines. The lack of humidity favoured the concentration and health of the fruit, which was harvested on 3 September by hand in 15 kg boxes, when the grapes reached the perfect balance between sugar and acidity, ensuring excellent quality and the preservation of the fruity and floral aromas typical of Macabeo.
Manufacturing Process
Production is based on a methodology inspired by that of some great white wines, delicate grape crushing, subsequent spontaneous fermentation, and a part with maceration with skins at low temperature to maximize aromas, static racking and fermentation in French oak barrels in contact with fine lees for 6 months, giving the final blend a point of complexity and elegance. Bottled in July 2024. The result is an elegant, complex white wine with a remarkable structure, which can be enjoyed both young and after several months in the bottle.
Tasting Note
Appearance: Pale yellow in color, with golden reflections, clean and bright.
Nose: The aroma is intense, reminiscent of white fruits such as pear and peach, with subtle floral notes of jasmine and an elegant touch of vanilla and toasted almond, typical of its time in the barrel.
Palate: Dry, fresh and balanced on the palate, with well-integrated acidity that provides vivacity and a long, silky finish. The barrel aging gives it a creamy texture, adding a complexity that translates into a delicate and persistent aftertaste.
Serving temperature: It is recommended to serve between 10-12°C to highlight its freshness and complexity.
This wine is an excellent choice to accompany seafood dishes, grilled fish or soft creams, and can also pair well with fresh cheeses or pasta with creamy sauces.

Manufacturing Process
Production using an ancestral method. Once the grapes have been carefully pressed, the spontaneous fermentation process begins. Before the fermentation process is complete, it is bottled, causing the carbon dioxide resulting from the reaction of sugar and alcohol to be retained in the bottle, giving it that very pleasant and refreshing fine-sparkling note. Bottled in September 2023. Rested in bottle with a minimum of 12 months.
The result is a sparkling white wine, brut nature, without any additives. Happy, relaxed and light given its low alcohol content.
Tasting Note
Appearance: Yellow in colour, with golden reflections, very slight turbidity due to its final fermentation in the bottle due to the resulting yeasts.
Nose: The nose stands out for its aromatic intensity reminiscent of white fruits.
Palate: On the palate it is dry, fresh and balanced, with a well-integrated acidity that provides vivacity and a short and refreshing finish.
Serving temperature: It is recommended to serve between 7-9.C to highlight its freshness and “frizzante” style.
This wine is an excellent choice for light salty appetizers, seafood and shellfish, or to round off a meal with sweet summer fresh fruit, cakes, sweets, pastries or chocolate.
Blanc Cavaller 2023

Macabeo and Montonec plots planted on our Turó del Castell, Aubellons and Quintana del Castell estates, located at an altitude of 300 metres on soils poor in sand and river-formed pebbles in the upper Conca del Gaià.
Harvest - grape harvest
Dry and warm harvest, with high temperatures during all seasons of the year and extremely low rainfall during spring and early summer, which allowed a low-yield but high-quality vegetative cycle for the vines. The lack of humidity favoured the concentration and health of the fruit, which was harvested on 3 September by hand in 15 kg boxes for the Macabeo grape and on 28 September for the Montonec grapes when the grapes reached the perfect balance between sugar and acidity, ensuring excellent quality and the preservation of the typical fruity aromas of the Macabeo and the point of freshness provided by the acidity of the Montonec grape.

Production is based on a methodology inspired by that of some of the finest white wines that are best aged for a long time: delicate grape crushing, subsequent spontaneous fermentation, and a portion of maceration on the skins at a low temperature to maximise aromas, static racking and fermentation in French oak barrels in contact with fine lees for 6 months, giving the final blend a touch of complexity and elegance. Bottled in July 2024. The result is an elegant, complex white wine with a remarkable structure, which can be enjoyed once it has rested in the bottle for another 6 months.

Nose: The aroma is intense, reminiscent of white fruits such as pear and peach, but ripe, with subtle notes of toasted bread, nuts and an elegant touch of vanilla and toasted almonds, typical of its aging in French barrels.
Palate: Dry, fresh and balanced on the palate, with well-integrated acidity that provides vivacity and a long, silky finish. The barrel aging gives it a creamy texture, adding a complexity that translates into a delicate and persistent aftertaste.
Serving temperature: It is recommended to serve between 10-12°C to highlight its freshness and complexity.
This wine is an excellent choice to accompany meat dishes, stews and more wintery dishes such as baked fish or casseroles, and can also pair well with mature cheeses. Longevity 4+
Extra Virgin Olive Oil “first ancestral pressing” 2024

Olive trees
Plots of olive trees bordering our region, surrounded to the south by the Mediterranean Sea, to the northwest by the Montsant mountain range and to the east by the Montmell mountain range. Arbequina olive trees, located between 100 and 300 metres above sea level on dry land.
Year - vintage
Dry and warm harvest, with high temperatures during all seasons of the year and low rainfall during spring and early summer, harvested in October and entered into the winery at the beginning of November.
Manufacturing Process
An ancestral production process, first pressing, without direct filtering in the bottle. It is literally the first and best juice of the olive.
Tasting Note
Extra Virgin Arbequina Oil, delicate golden, thick and unfiltered, first pressing with intense herbaceous and fruity aromas. Balanced bitter and spicy. In the mouth it recalls the olfactory complexity of pure and extraordinary flavour.
This oil is an excellent choice to accompany salad dishes, allowing you to enjoy all its “raw” potential, as it has a greater prominence than any industrially produced oil. It is also ideal for cooking any dish, given the superior quality of its fruit.
